Zucchini tagliatelle

Here are the zucchini tagliatelles from our super blogger Clelia, ideal as an appetizer or side dish.

It’s fresh, it’s crunchy, it’s tasty, tangy and very, very, very good for your health and your figure! 

Made with limes and mint, it’s a perfect match.

Ingredients for 6 people:

  • 5 beauties zucchini
  • 1 lime
  • A few sheets of mint fresh
  • Olive oil
  • Salt, pepper

Recipe for courgette tagliatelle

Tips: You can of course make the recipe with yellow lemons and fresh herbs: chives, coriander … But today the mint was a revelation. Another tip, for a slightly more sophisticated starter, you can add small strips of smoked salmon to the salad.

1- Peel the skin of your zucchini completely with a peeler. Wash them and wipe them with a clean cloth. Using a peeler, make zucchini tagliatelle by peeling the zucchini lengthways. Stop when you reach the heart of the zucchini which becomes soft and granular.

2- Wash and dry the mint leaves. Chisel them on top of the tagliatelle.

3- Take the zest from the lime and squeeze it to extract the juice. Reserve if you do not serve immediately.

4- Just before serving, add the lemon juice, zest, 3 tablespoons of olive oil, salt and pepper to your tagliatelle. Mix and serve.

Lemon juice, oil, salt and pepper are only added at the last moment to keep the tagliatelle crispy.
