The early potato is perfect for salads, as these delicious tagliatelles show of zucchini, arugula and early potatoes.
Ingredients for 4 people :
Wash the potatoes, place them in a bowl and cover them with water halfway up.
Cover with cling film and cook 8 to 10 minutes in the microwave oven at maximum power. Slice them up.
Wash the zucchini and tagliatelle with a thrifty knife lengthwise.
Wash the rocket.
Dice the tomatoes and place them in a salad bowl.
Season with vinegar, salt and pepper and then add the oil.
To prepare the virgin sauce,
Crush all the herbs (parsley, basil, chives) and add them to the tomatoes.
Divide the rocket into 4 bowls.
Add the raw zucchini and then the potatoes. Drizzle with virgin sauce.
Enjoy your meal!
