Strawberry mousse: delicious, easy and fast

Both delicious and refreshing, this strawberry mousse is a quick and easy recipe to prepare.

Ingredients for 4 people :

  • 250 g strawberries
  • 2 tbsp. lemon juice
  • 90 g brown sugar
  • 20 cl liquid cream
  • 2 g agar-agar
  • 2 eggs
  • 4 sheets of mint
  • 1 pinch of salt

Strawberry mousse

– Wash and set aside 4 strawberries for decoration.

– Wash and hull the rest of the strawberries, puree them with the lemon juice.

– In a saucepan, pour the strawberry coulis, add the sugar, cream and agar-agar. Mix and bring to a boil for 2 minutes.

– Allow to cool without the grout freezing.

– Separate the whites from the yolks.

– Whisk the egg whites with the pinch of salt until stiff. Once the egg whites are stiff, gently add them to the strawberry puree.

– Divide the foam obtained into 4 transparent cups. Place in the refrigerator for about 6 hours.

– At the last moment, decorate with strawberries and mint leaves.

Before pouring the mousse, you can line the cups. Once set, it will protrude from its containers, which will be very pleasant to look at!
