Quince and duck pie: the delicious recipe

Here is an original way to cook quince with this quince and duck sausage tart. 

Ingredients for 1 pie :

  • 2 onions
  • 20 g semi-salted butter
  • 3 duck sausages
  • 1 homemade shortcrust pastry
  • 50 g grated Emmental cheese

For the applesauce:

  • 250 g apple
  • 250 g quince
  • 12 cl of water
  • 50 g sugar
  • 20 g butter

Quince and duck sausage tart

For the applesauce:

– Peel, core and dice the apples.

– Peel and cut the quince in half. Remove the seeds and core (very grainy) and dice the quince flesh.

– Pour the fruit into a saucepan with the water and sugar. Cook over medium heat, stirring regularly until the fruit has reached a nice consistency. Add the butter and set aside.

– Peel and slice onions. In a frying pan, place the butter and cook them with a light coloration.

– In a frying pan, quickly cook the sausages without fat.

Degrease and cut them into 1 cm thick sections.

Preheat the oven to 220 °C (th. 7/8).

– Spread the dough in a large baking pan or tartlet moulds. Shape the edges, prick the bottom and edges with a fork. Arrange baking paper, ceramic balls (or beans, etc.) and bake for 20 minutes.

– Spread the compote on the tart base, arrange the onions and the slices of duck sausage.

– Sprinkle with grated Emmental cheese.

– Bake for 10 minutes until nicely coloured.

Quince: Preserved in a cool and airy place, quince can be kept easily for several weeks. In the refrigerator, separate it from other foods that it could flavor, and avoid freezing, which it does not tolerate well.
