Lemon balm red fruit crunch

Here is a light and tasty dessert with red fruits and lemon balm that perfectly combines fruits and flavours.

Preparation time: 15 min
Cooking time: 5 to 10 min

Ingredient for 4 people:

250 g of raspberries 150 g of strawberries 125 g of gooseberries 125 g of ripe 125 g of blueberries 1 sprig of lemon balm (lemon verbena or mint, depending on the market) 50 g caster sugar 1 packet of brick sheets 30 grams of butter.

Recipe for Red Fruit Crisp with Lemon Balm

Preheat the oven to 210°C.

Stack 12 sheets of brick and place on a cutting board. Cut them in a circle to a smaller size.

Place a sheet of baking paper on the board.

Place a cut sheet of brick on the paper. In a bowl, melt the butter in the microwave for 30 seconds, then brush the sheet of butter with a brush. Sprinkle with sugar. Superimpose a second disc of brick pastry over the already sweetened one. Butter and sugar. Repeat with a third sheet of brick pastry. Repeat this operation 3 more times to obtain 4 corollas. Hollow forming these brick sheet overlays in muffin moulds. Bake on a baking sheet for 5 to 10 minutes. Watch from time to time so that the corollas do not stain too much. When the brick sheets have turned a nice golden colour, take them out of the oven.

Wash the fruit and lemon balm.

Hull and quarter the strawberries. Chisel the lemon balm leaves. In a salad bowl, mix the fruit and the chopped lemon balm. Garnish the golden corollas with red berries and serve.

Express variant :

With the same fruit, you can enjoy delicious tarts made by the minute. Garnish the shortbread cookies with a small Swiss cheese ( mascarpone …thick cream, whipped cream…). Spread the fruit over the biscuits. It’s ready!
