Grilled Salmon and Vegetable Sandwich with Olives and Candied Lemon

Here is a smoked salmon toast with marinated / grilled vegetables, olives and lemon confit, as tasty as it is fragrant and an original idea for a picnic or a lunch on the go.

Ingredients for 4 people :

1 Retrodor wand 4 strips of aubergine marinated/grilled 200g of salmon smoked 4 strips of zucchini marinated/grilled 40g black olives ½ lemon confit

Smoked salmon, grilled marinated vegetables, olives and lemon confit on toast

Cut the Retrodor baguette in its length then make 3 slices of equal size in each of the two parts.

Spread, in order and on each slice of toast, a slice of aubergine, a slice of courgette and 50g of smoked salmon.

Cut the black olives and ½ candied lemon into thin strips and sprinkle over each slice of bread.
