Fig and green olive pie

Tarte aux figues et olives vertes

Treat yourself with this delicious fig and green olive tart. 

Ingredients for 4 people :

For the dough:

  • 200g of shortcrust pastry
  • 15g soft butter

For the trim:

  • 18 figs
  • 100g of green olives
  • 25g caster sugar

For the rest of the recipe:

  • 2 egg yolks
  • 1 egg
  • 30cl whole liquid cream
  • 1 orange
  • 65g caster sugar

Fig and Green Olive Tartlet

For the dough:

Spread the sugar dough thinly. Line lightly buttered tartlet tins, let them rest in the fridge for 10 min. Preheat the oven to 180°.

Blank the pie shells for 10 min.

For the trim:

Cut the figs into quarters. Cut the olives into petals and rinse them.

Mix the two fruits and sprinkle them with sugar. Let them marinate for 10 minutes.

For the flan:

In a bowl, mix the sugar with the eggs and add the cream. Zest an orange and add it to the flan.

For baking tarts :

Arrange the fruit in the tarts, leaving them to stand out. Fill the tartlets with flan and bake in a hot oven for about 20 min.

Check that the flan is cooked and remove the tarts from the mould when they come out of the oven.

The Chief’s Tip 

You can peel figs if the skin is too thick. If you get some juice from marinating the fruit, add it to the flan.
