As an aperitif as an appetizer or as a starter, these endives with duck and fromage frais are both fresh and delicious!
Ingredients for 4 people :
3 endives 1 spreadable fromage frais (St Morêt style) 1 duck leg confit 1 shallot 5 cl liquid cream Some pink berries Salt
Endives with duck and fresh cheese
> Remove the cores from the endives. Remove the leaves and wash them. Wipe them on absorbent paper.
> Run the duck leg under hot water to degrease it, wipe it well. Place it in a salad bowl and shred it with a fork. Add the fromage frais, pepper (and if necessary add the liquid cream).
> Peel, wash and chop the shallot. Add it to the previous preparation.
Salt if necessary.
> Carefully distribute the contents of the bowl into the hollow part of the endives leaves. Sprinkle with crushed pink berries and serve immediately.
