In autumn, winter or spring, enjoy this velvety green bean soup, ideal as a starter or as a main course for a light meal.
Start by removing the stalks and then wash the green beans. Peel and slice the onion Heat olive oil and 1 knob of butter in a saucepan. Brown the chopped onion for a few minutes. Add the green beans and stir for a few moments. Pour in the poultry stock Add the chives but keep a few sprigs for decoration. Cover and cook over low heat for 25 min.
Once the beans are cooked but still slightly crunchy,
Mix it all with a blender Add the fresh cream Salt and pepper
The velvety must have a certain consistency, so don’t hesitate to adjust the amount of stock and crème fraiche to get the best result.
Serve immediately with a few sprigs of chives as a decoration.
